What to cook today?

Apart from trying to be a blogger, having a motor neuron disorder, trying to be there for my daughters I also have to cook every day. To be honest cooking has never been my favorite activity. Often its expected that the one who’s home is the one who cooks. As I am now the one often at home the cooking chore is mine. However because of not being able to do everything alone I always have help when cooking.  Before this motor neuron disease cooking was a standard daily activity of mine just because I was the one the earliest at home from work. But to be honest in my culture it is also not strange that the woman does the daily cooking. My husband´s profession is a cook so now he is the one often helping me or sometimes the other way around. He likes meat dishes and I vegetarian dishes so we can now have a perfect balance . Our daughters also like vegetarian dishes so we definitely try to combine the dishes. As my husband will not be eating today with us we can go vegetarian , YES!

Today I made an Italian vegetarian dish
